Multifaceted chef, capable of combining two souls, sweet and savoury, thus managing to win over the most refined palates thanks to bon ton dishes that are deliberately simple but effective.
This is also thanks to her great teachers including Agata Parisella, Heinz Beck, Salvatore Tassa, Gianfranco Bolognesi, Marco Cavallucci, and the internationally renowned pastry chef Gino Fabbri, who passed on to her the genuine love for good food. Good food that Iside enhances with the highest quality local products, while always being careful to respect their seasonality.
Star of international events, in Italy and abroad, lecturer in cooking and pastry courses, she is the special guest of the main Italian television programmes dedicated to food and wine.
She also has a regular column in Excellence Magazine as well as having contributed to the creation of the book “The Hundred Chefs who changed the history of Italian cuisine” (ed. Mondadori, with a preface by Massimo Buttura), and the publication “The taste of success”.
She has held numerous prestigious positions, including Head Chef and Pastry Chef at La Pergola, a 3 Michelin star restaurant managed by chef Heinz Beck, and at La Frasca in Castrocaro Terme, a 2 Michelin star restaurant managed by chef Marco Cavallucci, to name a few.
The experience gained in prestigious restaurants earned Iside her first Michelin star in 2020 with La Parolina restaurant (Acquapendente, VT), of which she is the Head Chef and owner.
