Fish soup and potato dumplings


Ingredientis: For the gnocchi:

  • Potato IGP dell’Alto Viterbese gr 1000
  • Flour gr 360
  • Potato starch gr 50
  • Salt

For the fish soup :

  • Mixed fish, shellfish and bones kg 1
  • Cherry tomatoes gr 200
  • White wine to taste
  • Anchovies in oil to taste
  • Garlic to taste
  • Oil to taste Shallots to taste
  • Mixed herbs to taste
  • Chervil to taste


Boil potatoes, peel and mash, let cool, then add salt, flour and starch, prepare gnocchi.

Meanwhile prepare fish guazzetto by sautéing oil garlic chopped anchovies, shallot, add one part of fish, crustaceans and one part of rinsed bones, deglaze with white wine, add cherry tomatoes and ice, let cook, blend and strain, then reduce on fire.

Saute gnocchi in garlic oil and herbs.Add soup. Finish with sweet paprika.
